Pop-eye Pancakes

One of my favorite things to eat growing up were Pop-eye Pancakes or German Pancakes as some people call them.  I loved them!!  Loved them like whoa!  My sweetest mom would bake it up in the oven until they puffed up all huge.  She would add a sprinkle of parmesan cheese and serve.  It was a fast and wicked inexpensive breakfast for us.  A good thing when you have zero dollars, a husband and five kids!  

I made them for Nick and the kids the other day and they went over like crazy!  I was so glad the kids liked them.  It has been real hit and miss the last little while with them.  However, instead of cheese we put maple syrup over them.  Which was so so good.  That may have been the reason they gobbled them up.  Sweet stuff is exactly up their alley!






Pop-eye Pancakes

6 eggs
1 cup milk
1 cup flour
1tsp salt
2-4 tbsp butter (or a whole stick like me!)

Put butter in 9x13x2 inch pan and put in oven.  Preheat oven to 400 degrees.  Blend up eggs, milk, flour and salt in blender.  When butter is melted* in the pan pull it out of oven and pour batter in.  Put back in the oven and bake 20 minutes.  Pull out and enjoy!

 *It is great with the butter browned a little.  Leave in a few minutes after it melts but watch close because it will go from browned to burned real fast.
